Sweet and Sour Chicken

I made this last night. I got this recipe from my good friend Jamie. Sauce: 1 1/2 c. sugar 1 1/2 c. catsup 2 T. soy sauce 1 c. crushed pineapple(I used half a can tidbit pineapple and juice) 1/4 c. vinegar Combine all sauce ingredients and heat until sugar is dissolved. Cut up pieces of chicken and coat them in flour(I season the flour with pepper and garlic salt) Brown the chicken in olive oil. Place chicken and sauce in oven @ 350 for about 45 minutes. Serve over rice.

Apple Snicker Salad

  • 6 (2 1/4 ounce) Snickers candy bars, chill and chop
  • 6 apples, cored and chopped into bite sized pieces (Granny Smith and or or Red Delicious)
  • 1 (12 ounce) container Cool Whip
  • 1 (5 ounce) box instant vanilla pudding prepared


  •  mix together and enjoy

    Smores Bars


    1 cup butter, softened
    1 cup sugar
    2 eggs
    2 tsp. vanilla
    1-1/2 cups crushed graham crackers
    2-(7 oz.) jars marshmallow cream
    1-1/2 cups flour
    1/2 tsp. salt
    2 tsp. baking powder
    Chocolate candy bars

    Cream butter, sugar and eggs until light and fluffy. Stir in vanilla, salt and baking powder. Add flour and crushed graham crackers. Line the bottom of a 14" Dutch Oven with parchment paper. Spread 2/3 of the dough mixture and spread on parchment paper in oven. Place chocolate bars evenly over the dough. Cover with marshmallow cream. Spoon remaining dough mixture over chocolate bars. Bake at 350 degrees (21 coals on top; 11 on bottom) for 45-50 minutes.

    Cream Cheese Frosting (Steffany's Recipe)

    1 6 oz soft crem cheese
    1 soft cube real butter
    whip until light add  powered sugar about 3/4 of a 2# bag
    whip add  salt 3 shakes
    1tsp Almond
    1/2 tsp vanilla
    whip together
    add milk if too thick and squeese 1/2 a lemon

    Oriental Chicken Salad

    1 head of cabbage 1/2 purple 1/2 regular  shredded
    1 bunch green onions chopped
    1 bag silvered almonds
    1 bottled chicken
    2 chicken ramen noodles cruched up save spice packs for dressing

    Dressing:
    1 cup oil
    4T. sugar
    6T. vinegar
    salt and pepper
    ramen spice packs

    Philly Cheesesteak Sloppy Joes

    1 lb. ground beef/sirloin1 onion, chopped1/4 c. steak sauce1 c. beef stock1 green pepper, chopped1 pkg. sliced mushroomsProvolone cheese, cut into slices or pre-slicedSalt & Pepper to taste Buns/Rolls

    Preheat broiler.In large skillet over medium-high heat brown the ground beef/sirloin, about 5-6 minutes. Add the onion, green pepper and mushrooms and cook another 3-4 minutes, until they start to get tender. Stir in the steak sauce and beef stock, season with salt and pepper, bring up to a bubble and cook about 2 minutes. Split open rolls, place one slice of cheese on one side and toast under broiler, keep your eye on them so they don't burn! Place a scoopful of the meat on the bottom half of the bun, drizzle with additional steak sauce and place cheesy bun on top! Delish!

    Cheerio Treats

    • 1 c. sugar
    • 1 c. corn syrup
    • 1 c. creamy peanut butter
    • 1 t. vanilla
    • 5 c. Cheerios (I used Honey Nut Cheerios)

    In a large sauce pan, combine sugar and corn syrup. Bring to boil over medium heat.

    Allow mixture to boil for one minute and remove from heat.

    Add peanut butter and vanilla to mixture and mix until smooth.

    Add Cheerios and mix until all coated.

    Drop mixture by spoonful onto waxed paper and allow to cool.

    Makes approximately 2 dozen.

    Olive Garden Bread Sticks

    Dough:
    1 1/2 cups warm water
    2 Tbs sugar
    1 Tbs yeast
    1 Tbs salt (yes, the recipe calls for 1 Tablespoon, which I use every time and they turn out great.)
    2 Tbs butter, softened
    4-5 Cups flour


    Topping:
    3 Tbs butter melted
    sea salt
    1/4 tsp garlic powder



    For the dough, pour the water into a stand mixer with the sugar and yeast, let that sit and froth for about 10 minutes. Add salt, butter, and 2 cups of flour. Mix the dough on low. Add the rest of the flour a half cup at a time, until dough scrapes the sides of the bowl clean. Mix the dough about 5 minutes on medium speed, until its soft and easy to work with. Roll the dough out into a long log, spray a knife with cooking spray and cut the dough into 12-14 pieces. Roll those pieces into about 6 inch long snakes. Spray 2 large cookie sheets with cooking spray, and lay the breadsticks out leaving about 2 inches between each one. Place them in the oven with the temperature turned to 170 degrees. Let them rise for about 15 minutes, or until doubled in size.( I have also let them sit at room temp until they are doubled in size and then bake them in the oven) Once risen, brush them with the 1 1/2 T of melted butter and sprinkle them with salt. Now preheat the oven to 400 degrees and bake them for 12-15 minutes or until golden brown. While they are baking combine the rest of the melted butter with 1/4 t garlic powder. When the breadsticks are golden brown, remove them from the oven and brush them with the butter/garlic mixture.

    Instant Oatmeal Mix

    •6 cups quick-cooking oats
    •1/4 cup sugar
    •1/4 cup packed brown sugar
    •3 teaspoons ground cinnamon
    •1 teaspoon salt
    •1 cup dried fruit or nuts, if desired (I used 1/3 cup of each of the following – golden raisins, dried apple, and dried cranberries)*** see note below
    In a large bowl, combine all of the above ingredients. Then store in airtight container in a cool dry place for up to 1 month. Makes 14 half cup servings.

    To prepare oatmeal:

    Place 1/2 cup of mix in a deep microwave-safe bowl. (My cereal bowls worked just fine)

    Add 3/4 cup water to the mix and microwave, uncovered, on high for 45 seconds.

    Stir and cook 20-50 seconds more (40 seconds worked for me) or until bubbly. Let stand for 1-2 minutes.

    Serve with milk, some extra brown sugar, and fresh fruit if desired. Yield: 1 serving

    Bourbon Street Chicken

    Ingredients
    Original recipe makes 4 Servings
    2 poundsboneless chicken breasts; cut into bite-size pieces
    1 tablespoonolive oil; (1-2)
    1 garlic clove; crushed
    1/4 teaspoon ginger
    3/4 teaspoon crushed red pepper flakes
    1/4 cup apple juice
    1/3 cup light brown sugar
    2 tablespoons ketchup
    1 tablespoon cider vinegar
    1/2 cup water
    1/3 cup soy sauce
    1 tablespoon cornstarch; (if thick sauce desired)


    Bourbon Street Chicken Preparation
    Heat oil in a large skillet.
    Add chicken pieces and cook until lightly browned.
    Remove chicken.
    Add remaining ingredients, heating over medium heat until well blended and dissolved.
    Add chicken and bring to a hard boil.
    Reduce heat and simmer for 20 minutes uncovered.
    Serve over hot rice.

    Amish Oatmeal (serve with milk )

    3C. Oatmeal
    1/4C. sugar
    1C. milk
    2T. melted butter or 1/4 cup applesauce
    2 eggs
    2 tsp. baking powder
    1 tsp salt
    2 tsp vanilla
    2tsp cinnamon
    1/2 tsp nutmeg
    1/2 tsp cloves
    mix together put in buttered 9X13 pan sprinkle with brown sugar

    bake at 350 for 25-35 mins

    Pizza on a Stick

    1 1/2 c. warm (105-115 degrees) water
    1 Tbsp. sugar
    1 Tbsp. yeast
    1/2 tsp. salt
    3-4 1/2 c. flour
    1/2 c of dice pepperoni
    1/2 c of mozzarella
    Parmesan
    Italian Seasoning
    Wooden Skewers
    Melted butter
    Pizza sauce for dipping

    In a large bowl, combine water, sugar, and yeast. Let stand for 10 minutes or until yeast is bubbly.

    Add salt and stir. Add 1 1/2 c. flour and mix well. Add pepperoni, italian seasoning, parmesan and mozzarella. Gradually add more flour until dough starts to pull away from the sides of the bowl and it barely sticks to your finger.
    Spray a bowl with cooking spray and place dough in the bowl.

    Cover and allow to rise for 20 minutes.

    Remove from bowl and place on a lightly-floured surface. Spray a baking sheet with cooking spray. Roll into a rectangle and cut into 12 strips with a pizza cutter.

    Roll dough around skewer and bake 425 for 15min. Brush melted butter on it and sprinkle paremesan over it. Dip in pizza sauce

    Pretzel salad

    1 lg Raspberry jello
    1 1/2 cup water
    2-10oz frozen raspberries thawed
    Bring water to a boil mix in jello and raspberries refrigerate till partially set
    ... 2 cups pretzels crushed
    3/4 cube melted butter
    3Tb sugar
    Mix together and press in 9x13 pan bake at 400 for 8 min. Then cool
    1-8oz cool whip
    1-8oz soft cream cheese
    1cup sugar
    Whip together then spread over cooled crust then spread jello over the top..enjoy!!

    EASY SOUP BOWLS

    5-6 c. flour
    2 T. yeast
    2 T. sugar
    1 T. salt
    2 c. hot water

    Mix 4 cups of flour with yeast, sugar and salt. Add 2 cups hot water. Mix in additional flour until bread dough is formed, and not too sticky. {We used about 6 cups total} Let rise for 15 minutes. Punch down and shape into round loaves. Set on greased cookie sheet. Place in COLD oven. Place a casserole pan of hot water on the bottom rack. Let rise for about 15 minutes. Turn oven on to 400 degrees and bake for 30-35 minutes or until it's a nice golden brown color. Remove from oven and butter the tops. Cool for about 10 minutes. Cut a hole into the top of the bread bowl {be careful not to cut all the way through the bread} and fill with soup. Yum!!

    Cinnamon Rolls
    1 yellow cake mix
    5 cups Flour
    2 T. yeast
    2 eggs
    2 1/2 c. warm water

    Mix cake mix, eggs and flour. Dissolve yeast in warm water. Mix with cake mix. Let double in bulk (about 30 mins.)
    Makes a very sticky batter. Roll out on into rectangle on floured surface. Brush with melted butter 1 cube. Sprinkle
    with cinnamon and brown sugar. Roll up and cut 1/2 to 3/4 inch thick. Bake at 350 for 15-20 mins till golden brown.

    Frosting

    1/4 cup butter
    2 cups powdered sugar
    1/2 tsp vanilla
    3-4 T. milk

    APPLE BUTTER

    16 c. harvest apples, washed, cored, unpeeled, and chopped
    2 c. apple cider
    2 c. sugar
    1/4 tsp. ground cloves
    2 tsp. ground cinnamon
    Dash of ginger, nutmeg, mace and allspice to taste
    Combine apples and cider in crockpot. Cover and cook on low heat 10- 12 hours. Puree in food mill, sieve or food processor. Return apple mixture to pot and add sugar and spices. Cover and cook on low heat 6-10 hours. Pour into hot sterilized jars and seal. Apple butter may also be cooled and pureed in freezer containers and frozen for several months. Makes 4 pints.

    I peeled and cut my apples first then put in crockpot, it didn't take my 12 hours so you'll want to watch. If you have a hand blender it works awesome. I just let the apples & cider cool first, worked like a charm! I also didn't add ginger mace or allspice but did add a pinch of nutmeg.

    I got this recipe from my sister, Robin. I gotta try it. Apple butter is an all time favorite of our husbands from Grandma Osterhout.

    CHICKEN TORTILLA SOUP

    3 cloves garlic minced
    1 chopped onion
    2 TBSP butter
    2 TBSP flour
    4 cups half and half
    3 cans chicken broth
    1 can cream of chicken soup
    6 cups cubed cooked chicken breast
    1 cup salsa
    1 cdn creamed corn
    2 tsp cumin
    1 pkg fajita seasoning mix
    2 TBSP cilantro
    monterey jack cheese
    cheddar cheese
    tortilla chips

    Saute onion and garlic in butter for 5 minutes. Add flour and stir for 1 minute. Add chicken broth and half and half and bring to a boil. Reduce heat and add chicken soup, salsa, corn, chicken, cumin, fajita seasoning, and cilatnro. Stir and heat for 15 minutes.

    Put chips and cheese in bowl, cover with soup, and top with more cheese and chips and sprinkle with cilantro.


    WHITE BEAN CHICKEN CHILI


    2 tbsp butter
    3 tsp garlic powder
    2 med or 1 large yellow onion
    1-2 ob chicken breast, cut into pieces

    5 cans Great Northern White Beans
    26 oz carton of Wolfgang Puck's Natural Chicken Stock (at Walmart)
    2 cans of chipped Green Chilies
    1 tsp Cumin
    2 tsp Oregano
    2 tsp Sea Salt

    1/2 tsp Pepper
    1/2 tsp Cayenne Pepper (more if desired)
    1 cup Heavy Whipping Cream
    2 cups sour cream
    3/4 cup Herdez Salsa Verde (at Walmart)

    Chop onion and chicken and saute in butter and garlic salt (large pot, medioum heat)
    Drain and rinse beans, then add beans, chicken stock, chilies, cumin, oregano, and sea salt to pot. Simmer for 30 minutes, or for a cople of hours, depending on when you need it. Remove from heat had add pepper, cayenne pepper, sour cream, heavy cream and salsa verde.

    Serves approximately 12-16 people.

    Pumpkin Seeds

    Separate the seeds from the fiber. Combine 1 cup unwashed seeds with:
    1/4 teaspoon worchestershire sauce
    1 tablespoon butter
    3/4 teaspoon salt
    spread in shallow pan and bake for 2hrs at 250. Stir occasionally until the seeds are crisp, dry and golden.

    These pumpkin seeds are yummy!

    Broccoli Chesse Soup

    3 quarts water
    5 chicken bullion cubes
    Bring to a boil.
    add:
    2-3 carrots
    3 stalks celery
    1 onion
    1 bunch broccoli
    cubed or sliced cook until tender
    Combine 1/2 cup butter and 3/4 cup flour. Add to water. Simmer and stir to remove lumps. Add 1 pound Velveeta cheese, salt and pepper to taste. Simmer until smooth and creamy.

    Creamy Broccoli Soup

    Put ingredients in crock pot. . .
    4 cups water
    5-6 potatoes cubed
    3 tsp chicken bullion
    1 can small cream of chicken
    8 oz cream cheese cubed
    Saute 1 cup diced celery and 1 cup diced onion add to soup
    head of broccoli
    stir cook on low 8 hours/ or high 4 hours
    when done mash slightly with potato masher for creamy texture
